Interesting! All the articles I've read say that you shouldn't can pumpkin...I grew pumpkins in my backyard this year (my first crop) and ended up giving them all away to neighbors. Is it actually safe to can?
It is safe to can as long as you can them in cubes. It is not safe to puree them. I can pumpkins and winter squash, but I cut them up cubes first. I also canned summer squash that way too and most people will tell you not to can that either because it is mushy. But if you you cube it instead of slice it you can put it in casseroles or just serve it in the cubes.
