Breakfast Sausage with Vegetables

This dish has become one of my favorites. I fix it often and it is very versatile. I interchange the meat and the various vegetables depending on what I have or what I feel like eating. Due to dental issues I mainly eat soft or chopped foods. So this kind of meal is perfect for me. It is very easy to prepare in the Instant Pot but you can cook it anyway you want. I like the Instant Pot due to easy clean up as well as fast preparation. Cooking the spaghetti squash first, then while that is cooking I prepare the peppers and onion.


Spaghetti Squash Strands

First thing I do is to cook the spaghetti squash in the Instant Pot. This is a previous blog post I wrote last year that shows you how I do it, Spaghetti Squash Cooked In The Instant Pot. It is very fast, only 7 minutes compared to baking it in an oven. I put about one cup of water in the inner pot. Then put the cut squash on the rack and put the lid on it, making sure you have your gasket on the lid. Turn the release to sealing (NOT VENTING) and close the lid. Turn on using the manual or pressure button and set for 7 minutes.


Cutting up onion and peppers

While the spaghetti squash is cooking in the Instant Pot, I cut up the onion and peppers. I use whatever type of onions or peppers I have on hand. I cut them in slices but they can be chopped smaller if you like. I have started using a lot of peppers and onions, so always have some available. I did not include mushrooms in this recipe this time, but if I had some fresh ones I would have.

When the squash is done I remove it and pour the water out, Now heat the inner pot on saute and add some oil or bacon grease. When it is hot add the breakfast sausage. I use my masher to break down the ground sausage so it does not cook in a lump. I brown that a bit and then add the peppers and onions.

I cook them until the peppers are soft. You can cook them to suit your taste. I need them to be soft so they are easier for me to eat. At this point though, you can add whatever else and seasonings to the pot. Lastly I add the cooked spaghetti squash into the pot and mix it in. When it is hot, it is finished. It was very good!
