Skipping the Carbs in Food Preparation

Sticking to a Ketogenic food plan means I cook different now. I eliminate most of the carbs or obvious harmful ingredients from my old recipes. Most keto recipes I come across will almost always use cauliflower in place of rice or potatoes. I have done that, but don't always find it that tasteful. At least to me. I like cauliflower and include it in my plan. I just do not like to use it to replace the rice in a casserole. Mostly I just skip the rice and add more of the other ingredients.

For instance when I make halupki, the Slovak stuffed cabbage I grew up with, I now make it unstuffed. Using more chopped cabbage. More ground beef and other ingredients. Then add in other vegetables depending on what vegetables I have on hand or looked good at the store that day. It has become a dump & go recipe for the Instant Pot. Much faster and no longer an all day preparation.

I do this with other recipes as well. A stir fry is one of my favorite meals. I do not put it over rice either. Eating rice gives me an uncomfortable feeling for the next two days. That makes it easier to eliminate it from my food plan. Basically you can make a stir fry with a variety of vegetables and no meat if you choose. I always use meat in it but the meat is not the center of the dish. It is the vegetables and whatever types of seasonings I use. Each time I make it, I try to make it a little  different.   


A rice replacement I found!

A casserole is a dish I love to make. I have always used those very thin egg noodles in many of the recipes. It has been a struggle to not add at least some. Again though, replace the pasta in any recipe with more vegetables, a little less liquid and season it well. There are many new low carb alternative noodles or rice in the stores now. I choose not to buy most special ingredients and find my own ways of replacing them. I tried some but did not find any I was crazy about.

It is difficult to make my favorite Italian dishes without the pasta. Lasagna I now make with zucchini and I love it just as much. Spaghetti and meatballs has become a homemade sauce over a bed of spaghetti squash or French cut green beans. Meatballs made with pork rinds replacing the breadcrumbs. Sometimes I skip the meatballs and use sausage with onions, peppers, celery and mushrooms cooked in the sauce. Delicious!


I miss my own homegrown carrots!

Making a stew or soup is simple. It can be low carb as long as you skip the potatoes and carrots. Carrots is one of my favorite vegetables and I still use some from time to time. A soup or stew really needs that flavor so sometimes I add dehydrated diced carrots instead of fresh. I limit how much I use though. They are hard for me to resist. Chili is another good dish to make but just be sure to skip the beans. Sorry. They are high carb regardless of how healthy they are.





This does not mean you can never eat a potato or a carrot again. If you are counting how many carbs you can eat, plan your day to include the carb count of a potato. Be aware of the size of the one you eat. If you are going to splurge, do it on a vegetable. Not grains or sugar. I am no expert on this. This is just what I have found to keep me on track. It is better to save your splurges for after you have lost all your extra weight.


Cheese Omelet & Bacon

Something I like to do is to use an omelet to make a variety of good meals. Like adding tuna salad topped with cheese inside the omelet for a tuna melt. Try adding some chopped roast beef, onions, peppers and cheese for a cheese steak omelet. Taco ingredients in an omelet spices it up a bit. You get the idea. There are so many combinations you can make. One of my favorite omelets at a local restaurant is a Greek one using Greek cheese and other Greek ingredients.

There are tons of YouTube videos on low carb recipes. Though now I can change just about any recipe to fit my low carb count. Even if I have gone off my low carb food plan, I still basically cook that way most of the time. It is not hard to do. Giving up bread and other grains has made a difference in the way I feel. It is the sugar that is a struggle. Like in ice cream or my favorite cookies.  I must keep trying to beat that struggle and persevere.

Ideas For Low Carb Food


Oven Fried Chicken Breasts

Bob's Red Mill Almond Meal/Flour is the main substitute I use for wheat flours or breadcrumbs. The almond taste is excellent and in my opinion, way better than any flour or other grains. I have tried some other brands, but always come back to Bob's. Even if it costs more, it is always very fresh tasting. You can buy it in bulk packages and freeze the other ones until you need them. I like to bread my chicken with both the almond meal and the coconut flour. Then I drizzle coconut oil on top, so it has that slightly coconut taste to the chicken. It makes it different and one of our low carb favorites.

The key to sticking to your low carb plan is to make dishes that are REALLY good. Make snacks and have them ready and waiting for when you get the munchies. I find that is the one thing that helps me the most. For my husband and myself, it is not just about weight loss. In fact, he doesn't really need to lose any. It is the way it makes you feel. Cutting up a plate of raw vegetables served with a good dip is a very satisfying. Or you can bread the vegetable slices with Bob's Red Mill Organic Coconut Flour and almond meal and oven fry them for another tasty snack.

Planting a garden is not a hard thing to do!

I know what you are going to say, "But katlupe, that costs a lot more money than I can afford!" I used to think that too. Then I discovered that by only buying healthy food for snacks has really cut our food bill down. Do you know how much those chips, Doritos, candy and other goodies cost? What about a box of a dozen doughnuts? Shoot, and we are paying for that so called food??? What is wrong with us? Most of my readers here know that I grow a garden. So all season we are swimming in fresh vegetables. That is a big savings for us. You can do that too.

Salad is a part of every supper at our house!


You can't go wrong with meat and salad. Or you can make a stir fry or a low carb soup or stew. On my Pinterest Low Carb boards I have a huge amount of pins of low carb foods. Many are desserts and snacks. I am planning on trying new recipes weekly. I will be trying them and posting my recipes here as soon as I make them. Low CARB FOOD.......... CAN BE........ AND IS............GOOD!!!!!

Healthy Low Carb Eating

I remember so many years ago I would go on a diet to lose weight and be so hungry that finally I'd break down and eat a lot of the foods I was craving. I didn't realize what was happening to me. Why couldn't I stick with it? And when I did, why couldn't I lose weight? At Weight Watchers they said I was a slow loser. Yet I was starving and exercising. In fact, in my home I had a home gym. I belonged to the local racket ball club and was a regular on the exercise equipment. I loved working out with weights and did that all the time. I also did race walking and did it on local tracks as well as the indoor track at the racket ball club. What was wrong with me? I didn't have a lot of weight to lose so it didn't seem to me that it should be so impossible.

 In 2008, as I told in my previous post, Back To Low Carbing, I lost twelve pounds in my first week following Atkins. Unheard of for me ever in my whole life! So I was converted for life by that major feat. Life gets in the way sometimes. I stuck to it very well for over a year and did so well. What made me slide? Could be that I did not always having the right foods in the house. Could be that at times I wanted a quick meal. Ordering a pizza or Chinese food was easy. Yet, I KNEW in my brain it was not good for my health.

So what makes you stick with low carbs? The health benefits are undeniable. Not being hungry is a big plus for me. Having good meals with lots of food is another plus, not to mention the variety. Can't have bread? Big deal. It is just a filler anyway, as pasta, rice and potatoes are also. That is why everyone cooks and eats it. It fills everyone up.

 Someone on The BlogFrog mentioned that a hamburger without a bun is boring. Not for me! I try to make it look good, as well, as be part of a meal that is good. For one thing, I make good sized burgers and buy good quality ground beef. I season it liberally with Worcestershire sauce and garlic powder. I put it on a plate full of salad with dressing, and mayo on the side for my burger. It is a very delicious and meal I really do enjoy.

Just make sure you choose salad dressings that have low carbs. Always check the sugar. Hopefully it won't be the first ingredient in the list.  Eating salad almost daily is something that keeps me on my plan. Salad is our favorite side dish. We eat it every day and never get tired of it. I grow most of my salad vegetables all summer in my garden. Love those salads the best! If you have never gardened that is a good place to start.

What didn't you like about it?  There are many myths about it, but now, you can dispel them by checking some of the low carb sites and forums. Even allopathic professionals are prescribing low carbs these days. It is a great way to eat!

The Key To Low Carb Cooking

I am excited today because I have posted my very first guest post on another blog! Living A Changed Life is a fantastic blog written by Jennifer, who has photos showing how she lost a tremendous amount of weight! Be sure to go to her About Me page while you are there this morning to see the photos. The key to low carbing is to be able to cook from scratch. I have had comments about how expensive they think this way of eating is. But if you start adding up those loaves of bread, potatoes chips, potatoes, ice cream, rice and pasta, you will see a savings that can go toward the foods you thought were so expensive.

Meat is the center of a low carb meal. It doesn't have to be expensive steak. It can be cheaper cuts of meat. What you need to get started is to get some good low carb recipes and work from them. I make a variety of dishes and they are tasty and we look forward to them.

For example:

Sausage, Pepper and Onions is really good. My husband will eat the sausage as a sandwich as he does not care for peppers or onions. But it is a good low carb meal and I love it.

Chicken with hot wing sauce. We love this and have it often.

Turkey salad, this is one of those fast foods for us. Mix the turkey with mayonnaise (Yes, you can have it on low carbs and not the low fat variety!) and make a tossed salad and top your salad with the turkey salad. Mmmmm!

Pork Chops we like a lot. I cook them in my big covered roaster and they come out tender every time.

Casseroles that call for cracker or bread crumbs can still be made by substituting almond meal or flaxseed meal for the crumbs. Any recipe that calls for milk I use heavy cream for. And any recipe that calls for potatoes I use cauliflower for. I use zucchini from my garden for making many dishes, but the Zucchini Lasagna is one of my favorites by far.

I have completely banned white flour, cornstarch, and white sugar from my house. If it is not there I won't be tempted to use it. To tell the truth, the meals taste better without it. If I want gravy with my roast beef or turkey, I do what low carb chef, George Stella advises in his cookbook, Livin' Low Carb, "classic French cream reduction." That is using cream with the meat stock and some butter and reducing it to the thickness you want. A lot more taste than cornstarch or flour!

The trouble with low-fat, low calorie diets is they don't give you enough food to eat. It doesn't taste particularly good, and you feel deprived. I know, I was a Weight Watcher for many years. Lost weight, gained weight, over and over again. Now the low carb eating plan gets you into losing weight before you even realized that happened! Within the the first week, I lost 12 pounds which is unheard of for me, a slow loser. Are you a slow loser? Then you know what I am talking about. You are thankful if you've lost  a half a pound! Now I am eating bacon and eggs for breakfast and feeling better than I ever did on any diet! And losing weight too!

What is wrong with cooking from scratch? It is cheaper in the long run. My pantry seemed empty at first without the canisters and jars of flour, sugar, cornstarch, cornmeal, pastas, and don't forget rice! Everyone has to have rice, right? Not in our house. The funny thing is we ate a lot of rice and  beans before I started low carbs, then my husband admitted to me that he never really cared for them. So we easily eliminated them.

After you have gone through the Induction period, you will find that you are eating less food. Yes, you will. You will not want 4 slices of bacon, only 2. Not 3 eggs, only 1 or 2. It is how it works scientifically in your body. Everyone is different so you may need more food than the other person, but it works. Give it a try.
